Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cauliflower
Forms the main body of the soup and gives it a mild, vegetable flavour and tender texture.
Butter
Adds richness and fat, carrying flavour and giving the soup a smoother mouthfeel.
Flour
Combined with butter to thicken the soup slightly and give it body.

The step that matters

Stir in the butter and flour mixture. Flour clumps if added directly to hot liquid. Mixing it with butter first and stirring it in evenly helps it disperse and thicken the soup smoothly instead of leaving lumps.

Swap the cauliflower

How well each one fits the dish's main ingredients (butter, flour):

  1. Shallotfits better
  2. Leekfits better
  3. Arrowrootfits better
