Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Layer the dish

  1. Layer one-third of the mutton chops in a baking dish.

  2. Cover with a layer of sliced potatoes and onions, then sprinkle with salt and pepper.

  3. Add another layer of mutton chops, followed by more potatoes, onions, and the sliced kidney.

  4. Top with remaining potatoes, season, and add the rest of the mutton chops.

  5. Cover with the remaining onion and potatoes.

  6. Pour in the oyster liquor and melted butter, then sprinkle with parsley, salt, and pepper.

Bake and serve

  1. Cover the dish tightly and bake at 350°F (175°C) for three hours.

  2. Serve on a heated flat dish.

What each ingredient does

Mutton chops
Provide the main meat, whose fat and juices slowly moisten and flavour the dish during baking.
Potatoes
Form starchy layers that absorb cooking juices and soften into a tender, moist base.
Oyster liquor
Adds savoury, briny flavour and moisture that cooks into the layers.
Kidney
Contributes rich, savoury depth to the meat layers as it cooks.
Onion
Adds sweetness and aroma as it softens and mellows during long baking.

The step that matters

Cover the dish tightly before baking. A tight cover traps steam so the meat and potatoes cook through gently in their own juices. Without it, moisture escapes, and the top layers can dry out over the three-hour bake.

Swap the onion

How well each one fits the dish's main ingredients (mutton, potato, oyster, pepper, parsley, butter):

  1. Carrotfits better
  2. Shallotfits better
  3. Chivefits about as well
  4. Onionthe original

Fit is the average pairing score against mutton, potato, oyster, pepper, parsley, butter. Candidates are from the same food group and used in at least 100 recipes.
