Farina Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Soak the farina in a little water for 2 hours.

  2. Scald the milk in a saucepan.

  3. Stir in the soaked farina and cook for 10 minutes, stirring constantly.

  4. In a bowl, beat the eggs and sugar together.

Make the pudding

  1. Combine the cooked farina mixture with the beaten eggs and sugar, mixing well.

  2. Add nutmeg to taste.

  3. Pour the mixture into a buttered pudding dish.

Bake and serve

  1. Bake at 350°F (175°C) for 30 minutes or until firm and golden.

  2. Serve warm, not hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Farina
Thickens the milk into a soft, sliceable custard as it cooks and sets.
Eggs
Bind the pudding and set it into a firm, tender custard when baked.
New milk
Forms the liquid base that the farina thickens and the eggs set.
Sugar
Sweetens the pudding and helps it brown lightly in the oven.

The step that matters

Bake until just firm. Eggs set as they heat, so pulling the pudding out once the centre is just firm keeps it tender; overbaking makes it dry and grainy.

Swap the nutmeg

How well each one fits the dish's main ingredients (milk, egg, sugar):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Gingerfits less well
  4. Allspicefits less well

Fit is the average pairing score against milk, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
