Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cabbage
Is the main vegetable, becoming tender when boiled and then absorbing the dressing.
Vinegar
Provides the sharp acidity that gives the slaw its tangy flavour.
Butter
Adds fat and richness to the warm dressing.
Sugar
Balances the sharpness of the vinegar with sweetness.
Flour
Thickens the hot dressing so it coats the cabbage.

The step that matters

Pressing out the water after boiling the cabbage. Excess water dilutes the dressing and stops the cabbage from absorbing it well, so the slaw can taste watery. Draining and pressing the cabbage thoroughly keeps the dressing concentrated and clinging.

Swap the cabbage

How well each one fits the dish's main ingredients (vinegar, butter, sugar, pepper, flour):
