Sturgeon Cutlets or Steaks

Ingredients

Directions

Prepare the sturgeon

  1. Remove the skin from the sturgeon to avoid a strong taste.

  2. Cut slices about ½ inch thick from the tail piece.

  3. Rub the slices with coarse sea salt and broil over bright coals.

Season and serve

  1. Butter the slices and sprinkle with cayenne pepper.

  2. Serve hot, garnished with sliced lemon.

  3. For an alternative, mix bread crumbs, sweet herbs, black pepper, and salt.

  4. Dip the sturgeon slices in beaten egg yolk, then coat with the seasoning.

  5. Wrap the slices in buttered white paper and broil over bright coals.

  6. Serve with or without the paper.

What each ingredient does

Sturgeon
Forms the main body of the cutlet, providing the meat that is cooked and served.
Butter
Adds richness and moisture, helping the slices stay tender and carry the seasoning.
Bread crumbs
Form a crisp, golden coating on the alternative version of the slices.
Egg yolk
Acts as a binder, helping the bread crumb seasoning stick to the fish.
