Ingredients

Directions

Prepare the crab filling

  1. Boil the crabs and extract all the meat from the shells.

  2. Cut the meat finely and season with nutmeg, coarse sea salt, and cayenne pepper.

  3. Add a bit of butter, some grated bread crumbs, and enough vinegar to moisten the mixture.

  4. Fill the crab shells with the mixture.

Brown and serve

  1. Brown the filled shells by holding a red‑hot shovel or salamander above them.

  2. Cover a large dish with small slices of dry toast, crusts removed.

  3. Place a filled shell on each slice of toast.

What each ingredient does

Crabs
Provide the main meat that forms the body of the filling.
Butter
Adds fat and richness, keeping the filling moist and flavourful.
Grated bread crumbs
Absorb liquid and give the filling a softer, binding texture.
Vinegar
Adds acidity that brightens the flavour and moistens the mixture.

The step that matters

Brown the filled shells. Browning relies on high surface heat, so the shells must be held close to a red-hot tool to colour the top quickly. Too much distance or delay leaves the filling pale and dries it before it browns.

Swap the nutmeg

How well each one fits the dish's main ingredients (crab, pepper, butter, bread, vinegar):

  1. Parsleyfits better
  2. Tarragonfits better
  3. Garlicfits better
  4. Nutmegthe original

Fit is the average pairing score against crab, pepper, butter, bread, vinegar. Candidates are from the same food group and used in at least 100 recipes.
