Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

  1. Parsley + peppertop 2% of all pairs

    Shared aroma: 4'-methylacetophenone (bitter almond).

  2. Crab + creamtop 10% of all pairs

Shared aroma: acetic acid (sour, vinegar).

Cream and pepper barely smell alike, yet cooks put them together in 21,449 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Soft crabs
Form the main body of the dish, cooked whole in hot fat until tender.
Lard
Frying fat that carries heat evenly and gives the crabs a crisp, browned exterior.
Cream or rich milk
Adds fat and body to the gravy, making it smooth and rich.

The step that matters

Remove the parsley before it loses color. Parsley crisps quickly in hot fat, and once it darkens it turns bitter and burnt-tasting. Lifting it out at the right moment keeps it green and crisp.

Swap the parsley

How well each one fits the dish's main ingredients (crab, cream, pepper):

  1. Nutmegfits about as well
  2. Celeryfits about as well
  3. Tarragonfits about as well
  4. Parsleythe original

Fit is the average pairing score against crab, cream, pepper. Candidates are from the same food group and used in at least 100 recipes.
