Veal Cutlets

Ingredients

Directions

  1. Season the cutlets with salt and pepper.

  2. Mix grated stale bread, chopped marjoram, lemon peel, and mace or nutmeg on a flat dish.

  3. Dip each cutlet in the beaten egg, then coat with the bread mixture, ensuring both sides are covered.

  4. Heat beef dripping, lard, or butter in a frying pan over medium-high heat until boiling.

  5. Fry the cutlets thoroughly, turning to avoid burning.

  6. Keep the cooked cutlets warm in a covered dish.

  7. Skim the fat from the pan, add a little flour, and stir to make gravy.

  8. Pour the hot gravy around the cutlets and garnish with curled parsley.
