STEWED LEG OF MUTTON

Ingredients

  • 1 leg of mutton, trimmed
  • 3 pints water (or 2 pints water and 1 quart gravy from bones and trimmings)
  • slices of carrots
  • coarse sea salt to taste
  • small onions
  • small turnips
  • tomatoes or tomato ketchup
  • shredded or powdered sweet marjoram to taste

Directions

Place the leg of mutton in a pot with water or gravy.

Add slices of carrots and a little coarse sea salt.

Stew slowly for 3 hours.

Add small onions, small turnips, tomatoes or tomato ketchup, and sweet marjoram.

Let it stew for an additional 3 hours.

Ensure the meat is tender but not overcooked.

Serve with the vegetables and gravy, and mashed potatoes on the side.
