Why it works: Pepper and sage match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 5,388 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Pork Steaks

Ingredients

Directions

  1. Cut pork steaks about ½ inch thick and remove the skin.

  2. Trim the steaks neatly and beat them.

  3. Season with pepper, coarse sea salt, and powdered sage or sweet marjoram.

  4. Broil over a clear fire until fully cooked, turning once.

  5. To check doneness, cut one steak; if red inside, return it to the grill.

  6. For gravy, stew trimmings or coarse pieces of pork with chopped onions in a little water.

  7. Skim the gravy carefully and serve it in a boat with the steaks.

  8. Serve the pork steaks with apple sauce.
