Ham Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Roll out the pastry thick and cover the sides and bottom of a pie dish.

Assemble and bake

  1. Layer the bottom with ham slices, followed by the fowl pieces, then the sliced eggs, and another layer of ham.

  2. Sprinkle with pepper and pour in water or veal gravy.

  3. Cover the pie with a crust, notch and decorate it, then bake until golden.

Cold boiled ham
Adds salty, savoury flavour to the filling.
Hard boiled eggs
Add body and richness to the filling as they are set and sliced through the layers.
Pastry
Forms the crust that encloses the filling and browns in the oven.
