Broiled Ham

Ingredients

Directions

  1. Cut the ham into very thin slices.

  2. Soak the slices in hot water for at least 30 minutes, changing the water several times with scalding hot water.

  3. Dry the slices with a cloth.

  4. Heat a grill and broil the ham slices over a clear fire.

  5. If using cold boiled ham, no soaking is needed.

  6. To serve eggs, heat lard in a clean frying pan until boiling.

  7. Break each egg into a saucer, then gently slip them into the frying pan.

  8. Do not turn the eggs; pour hot lard over them until cooked, about 3 minutes.

  9. Remove the eggs with a slotted spoon, trim any discolored parts, and place one on each slice of broiled ham.
