What each ingredient does

Chicken
Forms the main body of the dish and browns in the hot fat.
Flour
Dredged on the chicken to help browning, and used with butter to thicken the sauce.
Lard or butter
Frying fat that browns the chicken and adds richness to the pan gravy.
Cream
Adds richness and body to the sauce made from the pan gravy.
Butter
Rolled in flour and added to the sauce to thicken it and add richness.

The step that matters

Thickening the sauce with butter rolled in flour. Flour thickens only when heated with liquid, so the sauce must be brought to a boil and kept simmering to swell the starch and cook out the raw flour taste. Adding the paste to a cold or lightly warm sauce can leave it lumpy or pasty.

Swap the parsley

How well each one fits the dish's main ingredients (chicken, pepper, flour, butter, cream, nutmeg):

  1. Cinnamonfits better
  2. Parsleythe original
  3. Tarragonfits about as well
  4. Thymefits about as well

Fit is the average pairing score against chicken, pepper, flour, butter, cream, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
