Chicken Salad

Ingredients

Directions

Prepare

  1. Remove skin and fat from the chicken, disjoint it, and cut the meat into small pieces, about 1 inch.

  2. Wash and split the celery, cutting the white part into 1-inch pieces.

  3. Mix the chicken and celery in a deep dish, cover, and set aside.

Make the dressing

  1. In a flat dish, mash the egg yolks with a wooden spoon until smooth.

  2. Add salt, cayenne pepper, mustard, vinegar, and sweet oil to the egg yolks and mix thoroughly until smooth.

Serve

  1. Pour the dressing over the chicken and celery just before serving and mix well with a fork.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Young chicken
Provides the main body of the salad, with meat cut into small pieces for easy eating.
Celery
Adds crunch and fresh, watery texture that contrasts with the soft chicken.
Hard-boiled egg yolks
Mashed into a smooth base that thickens and emulsifies the dressing.
Prepared mustard
Helps emulsify the oil and yolks and adds sharp flavour.
Vinegar
Adds acidity that brightens the dressing and balances the rich oil.
Sweet oil
Gives the dressing its richness and smooth, silky texture.

The step that matters

Adding the dressing just before serving. Acid and salt in the dressing draw moisture from the celery and soften it over time, so mixing too early leaves the salad limp and watery. Holding the dressing until serving keeps the celery crisp.

Swap the celery

How well each one fits the dish's main ingredients (chicken, egg, pepper, mustard, vinegar):

  1. Tarragonfits better
  2. Dillfits better
  3. Capersfits about as well
  4. Celerythe original

Fit is the average pairing score against chicken, egg, pepper, mustard, vinegar. Candidates are from the same food group and used in at least 100 recipes.
