  2. Weigh the strawberries.

  3. Set aside an equal amount of powdered sugar.

Make the syrup

  1. Sift half the sugar over the strawberries.

  2. Mash the inferior strawberries with an equal amount of powdered sugar.

  3. Heat the mashed strawberries in a basin over boiling water until thick juice forms.

  4. Strain the juice.

  5. Mix the strained juice with the remaining sugar.

  6. Boil the mixture in a porcelain kettle.

  7. Skim off the scum.

  8. Add the whole strawberries and their juices to the syrup.

  9. Heat gently without boiling.

Cool and preserve

  1. Remove strawberries one by one with a teaspoon.

  2. Spread them on dishes to cool, ensuring they do not touch.

  3. Repeat the cooling process until strawberries are clear.

  4. Transfer them with syrup into jars or pots.

What each ingredient does

Strawberries
Provide the fruit, and their juice forms the syrup that preserves them.
Powdered loaf sugar
Sweetens the fruit and thickens the juice, helping preserve the strawberries.

The step that matters

Heat gently without boiling. Boiling after the fruit is added can break the berries apart and toughen them. Gentle heat lets sugar penetrate slowly so the strawberries keep their shape and turn clear.
