Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Gelatinous setting agent that firms the cooled mixture into a sliceable, molded shape.
Cream
Provides richness and fat, giving the set dessert a smooth, soft texture.
Almonds
Supply the base flavor and body of the dessert as a fine paste blended into the cream.
Powdered white sugar
Adds sweetness and helps balance the richness of the cream and almonds.

The step that matters

Adding the melted isinglass and cooling undisturbed. Isinglass only sets properly when fully dissolved and then left still while it cools. Stirring or moving the molds during setting can break up the gel and leave the blancmange soft or grainy.

Swap the mace

How well each one fits the dish's main ingredients (rose, almond, cream, sugar):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Allspicefits better
  4. Macethe original

Fit is the average pairing score against rose, almond, cream, sugar. Candidates are from the same food group and used in at least 100 recipes.
