Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lemons
Provide the juice and the rind's aromatic oils for flavour and tartness.
White brandy
Extracts lemon oils from the rind and preserves the finished drink.
Loaf sugar
Adds sweetness and balances the sourness of the lemon juice.
Milk
Hot milk curdles and binds with particles, helping the liquid clear on standing.

The step that matters

Pouring in the hot milk. Boiled milk curdles when it meets the acidic lemon mixture, and the curds carry suspended particles down with them. This clarifies the liquor. Milk added cold or not boiled will not clear the same way.
