Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pearl barley
Releases starch and body into the water, giving the drink its thick, mildly nutty texture.
White sugar
Adds sweetness to balance the grainy, earthy flavour of the barley.
Lemon rind
Contributes fragrant citrus aroma and a light bright note to the drink.

The step that matters

Boil gently for 2 hours. A gentle simmer lets the barley soften and release its starch slowly while the water reduces only slightly. A hard boil can break up the grains and cloud the liquid, and too little heat leaves the barley hard.
