Scalloped Oysters

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Chop the hard-boiled eggs very finely and mix with the bread crumbs.

Layer and bake

  1. Cover the bottom of a deep pie dish with the egg and crumb mixture.

  2. Layer the oysters on top, adding 3 small pieces of butter between layers.

  3. Continue layering until all oysters are used, reserving enough crumbs for the top.

  4. Bake in a 400 °F (200 °C) oven for 45 minutes.

  5. Serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Form the main body of the dish and release their briny juices as they cook.
Bread crumbs
Absorb moisture and give the layers body so they hold together when baked.
Hard-boiled eggs
Add richness and firmness to the crumb mixture, helping it set as it bakes.
Butter
Adds fat and richness, helping the layers brown and taste rich.

The step that matters

Reserving crumbs for the top. Keeping enough crumb mixture for the top layer covers the oysters, so they are shielded from direct heat and the surface can brown lightly rather than dry out.
