Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Leg of old mutton
Provides the meat and rich flavour that build the body of the broth as it simmers.
Barley
Releases starch during long boiling, thickening the soup and giving it a fuller texture.
Leek
Adds a mild onion-like sweetness and aroma to the broth.
Celery
Contributes a fresh, savoury aroma that rounds out the broth.

The step that matters

Skimming the foam after the boil begins. Foam carries impurities and coagulated proteins from the meat. Removing it early keeps the broth clear and clean-tasting rather than cloudy or greasy.

Swap the parsley

How well each one fits the dish's main ingredients (mutton, barley, celery, leek, pepper):

  1. Thymefits about as well
  2. Parsleythe original
  3. Marjoramfits less well
  4. Turmericfits less well
