Stuffing for Fish

Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread
Soaked and squeezed, it adds bulk and a soft, moist body to the stuffing.
Eggs
Yolks bind the stuffing, while whipped whites lighten its texture.
Butter
Fat that carries the flavour of the onions and keeps the stuffing rich and tender.
Onions
Cooked soft in butter, they add sweetness and savoury depth.

The step that matters

Folding in the egg whites. Whites beaten until stiff trap air that gives lightness. Folding gently, just before filling, keeps that air from collapsing, so the stuffing stays light rather than dense.

Swap the onion

How well each one fits the dish's main ingredients (butter, bread, egg, parsley, nutmeg, pepper):

  1. Shallotfits better
  2. Spinachfits better

Fit is the average pairing score against butter, bread, egg, parsley, nutmeg, pepper. Candidates are from the same food group and used in at least 100 recipes.
