Chicken Pie-

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the chicken

  1. Wash the chicken pieces in cold water and place them in a stew pan, covering with cold water.

  2. Skim the surface just before boiling.

  3. Add parsley, mace, lemon peel, butter mixed with flour, salt, and pepper.

  4. Cover and cook until the chicken is tender.

  5. Remove the chicken from the pot.

  6. Reduce the broth to ½ pint.

  7. Strain the broth.

Assemble and bake

  1. Roll out pastry to ¼ inch thick.

  2. Cut the pastry into squares.

  3. Line a deep buttered dish with pastry.

  4. Layer the chicken cut side up.

  5. Add pastry squares.

  6. Pour in the broth.

  7. Repeat layers, finishing with chicken and broth.

  8. Cover with pastry.

  9. Cut slits in the pastry.

  10. Bake in a preheated oven at 400°F (200°C) for 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main meat, which becomes tender through long gentle simmering in the broth.
Butter
Adds richness and carries flavor, and when mixed with flour it helps thicken the broth.
Flour
Mixed with butter to thicken the broth so it lightly coats the chicken and pastry.
Pastry
Forms the lining and crust that encloses the chicken and broth while baking to golden.

The step that matters

Skim the surface just before boiling. Foam and fine impurities rise as the water heats; removing them keeps the broth clear and clean-tasting.

Swap the mace

How well each one fits the dish's main ingredients (chicken, parsley, lemon, butter, flour, pepper):

  1. Thymefits better
  2. Marjoramfits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against chicken, parsley, lemon, butter, flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
