Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Dark red cabbage
Provides the main bulk and the pigment that gives the pickle its colour.
Cider vinegar
Acidity that preserves the cabbage and gives it its sharp, tangy flavour.
Salt
Draws moisture out of the cabbage and seasons the pickle.
Beeswax
Forms a airtight seal over the stoppers to keep air out of the jar.

The step that matters

Keep the cabbage submerged under the vinegar. Cabbage left exposed above the liquid can spoil or mould, because air and surface microbes can grow where the acidic brine does not reach. Filling to the neck and keeping the stopper dry protects the whole batch.

Swap the mace

How well each one fits the dish's main ingredients (cabbage, clove, pepper, cider, vinegar):

  1. Allspicefits better
  2. Thymefits better
  3. Cinnamonfits better
  4. Macethe original

Fit is the average pairing score against cabbage, clove, pepper, cider, vinegar. Candidates are from the same food group and used in at least 100 recipes.
