What each ingredient does

Lettuce
Forms the body of the salad; soaking in cold water firms up the leaves for a crisp texture.
Salad dressing
Adds flavour and moisture to the leaves.

The step that matters

Mix with dressing just before serving. Dressing contains salt and acid that draw water out of lettuce leaves, so they wilt quickly if dressed too early. Dressing at the last moment keeps the leaves crisp.
