What each ingredient does

Beef tongue
Forms the main body of the salad and is cooked tender before being chopped.
Brown flour
Thickens the butter and cooking liquid into a sauce that binds the salad.
Fresh butter
Adds richness and fat, helping the flour form a smooth, thickened base.
Cooking water from the tongue
Supplies savory liquid and moisture for the sauce.
Cucumber pickles
Adds sharp acidity that contrasts with the rich sauce and tongue.

The step that matters

Stir the flour and butter into the cooking water until thickened. Cooking the flour in melted butter before adding liquid helps prevent lumps, and the sauce must be stirred as it thickens so the starch swells evenly.

Swap the mace

How well each one fits the dish's main ingredients (beef, flour, butter, clove, pepper, cucumber, celery):

  1. Tarragonfits better
  2. Parsleyfits better
  3. Turmericfits better
  4. Macethe original

Fit is the average pairing score against beef, flour, butter, clove, pepper, cucumber, celery. Candidates are from the same food group and used in at least 100 recipes.
