Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beets
Form the main body of the dish and become tender and sweet as they cook.
Butter
Adds richness and fat that carries flavor and gives the sauce a smooth texture.
Flour
Thickens the butter and cooking liquid into a smooth, lightly bodied sauce.
Cider vinegar
Adds acidity that sharpens the flavor and balances the beets' natural sweetness.

The step that matters

Carefully turn the beets without breaking them. Beets are soft after long boiling and their flesh breaks easily. Gentle turning keeps the slices intact so they hold their shape while simmering in the sauce.

Swap the parsley

How well each one fits the dish's main ingredients (butter, flour, cider, vinegar, pepper):

  1. Tarragonfits about as well
  2. Thymefits about as well
  3. Allspicefits about as well
  4. Parsleythe original

Fit is the average pairing score against butter, flour, cider, vinegar, pepper. Candidates are from the same food group and used in at least 100 recipes.
