Almond Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Mix the flour and baking powder together, then set the flour mixture in a pan of hot water until needed.

  3. Beat the egg whites with 1 tablespoon of sugar until stiff.

Make the batter

  1. Cream the butter and remaining sugar until light.

  2. Beat in the egg yolks, then add the nutmeg and ground almonds.

  3. Mix well, then fold in half of the flour, followed by half of the egg whites.

  4. Repeat with the remaining flour and egg whites.

  5. Pour the batter into a well-buttered cake pan.

Bake

  1. Bake for 45 to 50 minutes, testing with a wooden skewer for doneness.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whites trap air for lift and structure, while yolks add richness and tenderness.
Flour
Provides the structure that holds the cake together as it sets.
Baking powder
Releases gas in the batter, helping the cake rise in the oven.
Butter
Adds fat for a tender crumb and rich flavor.
Sugar
Sweetens the cake and helps create a light, creamed texture when beaten with butter.
Blanched almonds
Add moisture, nutty flavor, and a tender, dense crumb.

The step that matters

Folding in the egg whites. Folding gently keeps the whipped egg whites full of air. Stirring or deflating them makes the cake denser and less risen.

Swap the nutmeg

How well each one fits the dish's main ingredients (flour, butter, sugar, egg, almond, milk):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Capersfits less well
  4. Turmericfits less well

Fit is the average pairing score against flour, butter, sugar, egg, almond, milk. Candidates are from the same food group and used in at least 100 recipes.
