What each ingredient does

Butter
The fat being treated; the soda water works on its sour free acids to reduce the rancid taste.
Baking soda
A mild alkali that neutralizes the acids responsible for the rancid, sour flavour in butter.

The step that matters

Rinsing the butter thoroughly. Soda left in the butter leaves an alkaline, soapy taste. Rinsing with fresh cold water several times removes the dissolved soda and the neutralized acids with it.
