Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Mix the Graham flour, white flour, salt, and lard together.

  2. Add the warm milk and beaten egg yolks.

  3. Beat the egg whites with 2 teaspoons of sugar until stiff, then fold them into the mixture.

  4. Finally, add the baking powder.

Bake

  1. Heat the gem pans, grease them, and quickly fill with batter.

  2. Bake in a 400°F (200°C) oven.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Graham flour
Provides the main structure and a nutty, coarse texture.
White flour
Adds gluten for structure, keeping the gems tender yet firm enough to hold shape.
Eggs
Whipped whites trap air to lighten the batter, while yolks add richness and set the structure.
Baking powder
Releases gas in the hot oven, making the gems rise and become airy.
Lard
Fat coats the flour and shortens gluten, giving a tender crumb and rich flavour.
Warm sweet milk
Provides moisture that hydrates the flours and gives a soft, sweet batter.

The step that matters

Fold the whites and fill quickly. Fold the beaten whites in gently and fill the hot pans quickly. Whipped whites trap air, and baking powder gives gas that expands in the oven; overmixing deflates the foam and waiting lets the rise fade.
