Why it works: Celery and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 6,810 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Beef Soup

Ingredients

Directions

Prepare the broth

  1. Wash the beef in cold water and place it in a soup kettle with enough cold water to cover it.

  2. Skim the surface as it heats until no more scum rises.

Simmer

  1. Cover the kettle and cook over low heat for 5 hours, replenishing with boiling water if it boils down too much.

  2. After 3 hours, add the diced celery root, chopped parsley, chopped leeks, and washed rice.

  3. After 5 hours, remove the meat and bones, skim the soup, and season with salt and pepper.

  4. Add the grated nutmeg, stir, and serve hot.

What each ingredient does

Beef leg
Releases flavor and gelatin into the broth as it simmers slowly over low heat.
Celery root
Adds earthy, aromatic flavor that deepens the broth during the long simmer.
Leeks
Contribute mild onion-like sweetness and aroma to the soup.
Rice
Softens and slightly thickens the broth as it cooks.

The step that matters

Skimming the surface as it heats. Scum is coagulated protein and impurities that rise as the water heats. Removing it early keeps the broth clear and clean-tasting; leaving it in makes the soup cloudy and gives it a muddy flavor.
