Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Young beets
Provide the main body and earthy sweetness of the dish.
Fresh butter
Adds richness and fat that carries flavour through the sauce.
All-purpose flour
Thickens the butter and vinegar mixture into a light sauce.
Cider vinegar
Adds acidity that brightens the sweet earthiness of the beets.

The step that matters

Turning the beets gently. Beets are soft after long boiling and can break apart easily. Turning them carefully keeps the slices whole, so they stay neat and hold their shape in the sauce.

Swap the parsley

How well each one fits the dish's main ingredients (butter, flour, cider, vinegar, pepper):

  1. Tarragonfits about as well
  2. Thymefits about as well
  3. Allspicefits about as well
  4. Parsleythe original

Fit is the average pairing score against butter, flour, cider, vinegar, pepper. Candidates are from the same food group and used in at least 100 recipes.
