Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Mix the flour and baking powder together.

  3. Set aside 2 tablespoons of sugar to beat with the egg whites.

Make the batter

  1. Cream the butter and remaining sugar until light.

  2. Beat the egg yolks with cold milk and stir into the butter mixture until very light.

  3. Add the grated nutmeg.

  4. Fold in half of the flour, then half of the beaten egg whites.

  5. Add the remaining flour and then the rest of the egg whites.

Bake

  1. Pour the batter into a buttered cake pan and bake for 1 hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Egg yolks enrich and bind the batter, while whipped whites add lift and a light crumb.
Butter
Creamed with sugar, it traps air and gives the cake its tender, rich texture.
Flour
Provides the structure that sets as the cake bakes.
Sugar
Sweetens the cake and helps the creamed butter hold air.
Baking powder
Releases gas in the oven, helping the cake rise.

The step that matters

Folding in the egg whites. Whites hold air only while whipped, so folding them in gently with flour keeps the batter light. Stirring hard knocks out the air and leaves a dense cake.

Swap the nutmeg

How well each one fits the dish's main ingredients (flour, sugar, butter, egg, milk):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Jalapenofits less well
  4. Capersfits less well

Fit is the average pairing score against flour, sugar, butter, egg, milk. Candidates are from the same food group and used in at least 100 recipes.
