  1. Remove from heat and pour into a pitcher.

  2. Serve warm.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites and yolks thicken the cider and give it a frothy, creamy body.
Sugar
Sweetens the drink and helps stabilise the beaten egg whites.
Cider
Forms the liquid base and supplies the main apple flavour.

The step that matters

Heating the egg mixture without boiling. Egg proteins set and curdle when overheated, so the mixture should be heated gently while stirred. Boiling can scramble the eggs and spoil the smooth, frothy texture.

Swap the nutmeg

How well each one fits the dish's main ingredients (cider, sugar, egg):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Allspicefits less well
  4. Gingerfits less well

Fit is the average pairing score against cider, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
