Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef scraps
Provide meat juices and fat that build the gravy's savory, rich flavor.
Onions
Add sweetness and aromatic depth as they cook down into the gravy.
Carrots
Contribute natural sweetness and body to the gravy's base flavor.
Water
Creates the liquid that extracts flavor from the browned solids as they simmer.

The step that matters

Start with a brisk fire to brown the gravy. Browning the meat and vegetables builds deep, roasted flavor through the Maillard reaction. If the heat is too low, the solids steam instead, leaving a pale, flat-tasting gravy.

Swap the clove

How well each one fits the dish's main ingredients (onion, carrot, beef):

  1. Celeryfits better
  2. Cuminfits better
  3. Parsleyfits better
  4. Clovethe original

Fit is the average pairing score against onion, carrot, beef. Candidates are from the same food group and used in at least 100 recipes.
