What each ingredient does

Cold roast beef
Provides the meat that is gently softened and held moist by simmering in liquid.
Capers or pickled cucumbers
Add sharp, briny acidity that cuts the richness of the beef and butter.
Lemon juice or vinegar
Adds acidity that brightens the flavour of the stewed beef.
Butter
Adds richness and flavour to the stew and browns the bread when fried.
Bread
Fried until golden, it adds a crisp, browned texture between the beef layers.

The step that matters

Simmer the beef slowly without boiling. Boiling toughens meat proteins and can make the beef dry and stringy, while gentle simmering keeps it tender and moist.
