What each ingredient does

Young spinach
Forms the main body of the dish, wilting down into a soft, tender mass when stewed.
Butter
Adds fat and richness, carrying flavour and giving the stewed spinach a smooth mouthfeel.
Flour
Thickens the cooking liquid, helping the cream or milk turn into a smooth, coating sauce.
Cream or milk
Moistens the spinach and, as it simmers, forms a creamy sauce that binds the greens.

The step that matters

Squeezing out the excess water after blanching. Spinach holds a lot of water. If it is not squeezed dry before stewing, the extra liquid dilutes the sauce and keeps the flour from thickening it properly.

Swap the spinach

How well each one fits the dish's main ingredients (butter, flour, sugar, nutmeg, cream, bread):

  1. Arrowrootfits better
  2. Leekfits better
  3. Shallotfits about as well
