Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Carrots
Form the main body of the dish and give it its sweet, earthy flavour.
Milk or cream
Cooks down into a sauce that coats the carrots and adds richness.
Egg yolks
Thicken the sauce as they set gently with the heat, giving it body.
Loaf sugar
Adds sweetness that balances the savoury salt and pepper.

The step that matters

Adding the egg yolks to the sauce. Egg yolks thicken when heated gently but can scramble and curdle if the sauce is too hot or boiling. Remove the carrots first and stir the yolks in off the heat or over low heat so the sauce turns smooth rather than grainy.

Swap the carrot
