What each ingredient does

Granulated sugar
Forms the syrup that sets into a smooth, glossy icing as it cools and is whipped.
Water
Dissolves the sugar so it can be heated into a syrup without scorching.

The step that matters

Remove the spoon before the syrup boils, then boil without stirring. Stirring once the sugar has dissolved can trigger crystal formation, leading to a grainy icing. Keeping the spoon out and the syrup undisturbed helps it stay smooth.
