Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Wash and pit the cherries.

  2. If the fruit is very juicy, coat the lower crust with beaten egg before adding the cherries.

Assemble and bake

  1. Fill a pie plate lined with pastry with the cherries.

  2. Sprinkle the sugar over the cherries.

  3. Sift the flour over the sugar.

  4. Dot with small bits of butter.

  5. Fit on the top crust and bake at 400°F (200°C) until golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cherries
Provide the main fruit filling and flavour of the pie.
Sugar
Sweetens the filling and draws juice out of the cherries.
Flour
Thickens the cherry juices as the pie bakes.
Butter
Adds richness and fat to the filling.

The step that matters

Coat the lower crust with beaten egg when the fruit is juicy. Cherries release liquid as they heat, which can soak the bottom crust and leave it soggy. A thin egg coat seals the pastry so it stays crisp.
