Recipe for Canning Corn

Ingredients

Directions

  1. Cut the corn from the cob and scrape the cob with the back of a knife to extract all the sweetness.

  2. Pack the corn tightly into clean jars using the small end of a potato masher.

  3. Screw the jar lids on tightly by hand.

  4. Place a cloth in the bottom of a wash boiler and lay the jars inside, adding cloths between them to prevent breaking.

  5. Cover the jars with cold water and boil for three hours continuously.

  6. Remove the jars and tighten the lids as much as possible with a can wrench.

  7. Store the jars in a dark, cool place, ideally packed in sand.
