Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the custard

  1. Combine milk, maple sugar, and cornstarch in a double boiler.

  2. Cook the mixture until it boils.

  3. Add the yolks of the eggs to the mixture.

  4. Stir the mixture well.

  5. Pour the mixture into a pudding dish.

Top and bake

  1. Make a meringue with the egg whites.

  2. Spread the meringue over the pudding.

  3. Brown the meringue in a 350°F (175°C) oven.

Serve

  1. Serve the pudding cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the custard, and whites whip into the meringue topping.
Cornstarch
Thickens the milk mixture as it cooks, giving the pudding its body.
Milk
Forms the liquid base of the custard.
Maple sugar
Sweetens the pudding.

The step that matters

Brown the meringue in a 350°F (175°C) oven. Meringue can weep or brown unevenly if underbaked or overbaked. Watching it closely lets the surface set and color lightly without the sugar scorching.
