What each ingredient does

Gelatine
Sets the liquid mixture into a firm, sliceable mousse as it chills.
Strawberry juice
Provides the strawberry flavour and most of the liquid in the mousse.
Sweet cream
Adds fat for a rich, smooth texture that softens the set gelatine.

The step that matters

Stirring in the dissolved gelatine until well mixed. Gelatine must be fully dissolved and evenly distributed before chilling. If it is lumpy or unevenly mixed, it can set in streaks or clumps instead of a uniform mousse.
