What each ingredient does

Rolled oats
Their starch absorbs water and swells, thickening the liquid into a creamy porridge.

The step that matters

Sifting in the oats slowly. Adding oats gradually to boiling water lets each portion hydrate separately, which prevents dry clumps from forming as the starch swells.
