Why it works: Carrot and potato match in chemistry and in kitchens. They rank in the top 4% of all ingredient pairs, and cooks put them together in 3,107 recipes. Both carry 2-isobutyl-3-methoxypyrazine, which smells green bell pepper, earthy. The science ↓

Boiled Dinner

Ingredients

Directions

Cook the beef

  1. Wash the corned beef and place it in a kettle with plenty of boiling water.

  2. Bring to a boil, then reduce heat and let it cook slowly for 3 to 4 hours, depending on size.

Add the vegetables

  1. Thirty minutes before serving, remove some broth and add the cabbage and carrots.

  2. If the carrots are large, cut them lengthwise into quarters.

  3. In another kettle, remove more broth and add hot water if needed, then cook the potatoes for 20 to 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Corned beef
Provides the main savory meat flavour and becomes tender through long, slow simmering.
Cabbage
Adds mild sweetness and a tender texture as it cooks in the seasoned broth.
Carrots
Contribute natural sweetness and hold their shape well during simmering.
Potatoes
Absorb the broth's flavour and add starch that gives body and a soft, hearty texture.

The step that matters

Cook the beef slowly. Keeping the liquid at a gentle simmer rather than a hard boil lets connective tissue in the corned beef break down slowly, so the meat turns tender instead of tough and stringy.

Swap the cabbage

How well each one fits the dish's main ingredients (beef, carrot, potato):

  1. Onionfits better
  2. Parsnipfits better
  3. Tomatofits better
  4. Cabbagethe original

Fit is the average pairing score against beef, carrot, potato. Candidates are from the same food group and used in at least 100 recipes.
