Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the loaf

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, combine ground beef, salt, eggs, pepper, and bread crumbs without beating.

  3. Form the mixture into a roll and place it in a pan.

Bake

  1. Dredge the roll with flour and pour boiling water over it.

  2. Add butter and bake for 1½ hours, basting often.

Make the gravy

  1. Remove the roll and mix 1 tablespoon flour with a little cold water.

  2. Cook the mixture until thickened, then add milk, pepper, and salt to taste.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ground beef
Forms the body of the loaf and gives it its meaty structure.
Eggs
Bind the meat mixture so the loaf holds together when sliced.
Bread crumbs
Absorb juices and keep the loaf moist and tender.
Flour
Thickens the pan liquids into a smooth gravy.

The step that matters

Combine without beating. Overworking ground meat with eggs and crumbs develops a firm, springy texture, so mixing gently keeps the loaf tender.
