Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Open the can of tomatoes and pour them out, draining some of the juice.

  2. Season the tomatoes with coarse sea salt, pepper, and sugar.

Assemble and bake

  1. In a buttered baking dish, layer the tomatoes and bread crumbs alternately, finishing with a layer of bread crumbs on top.

  2. Dot the top with pieces of butter.

  3. Bake in a moderate oven at 350°F (175°C) for 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Provide the main body and acidic, juicy base of the dish.
Bread crumbs
Absorb tomato juice and add structure and a light crust-like texture on top.
Butter
Adds richness and helps the top brown as it bakes.

The step that matters

Draining the tomatoes. Removing some juice keeps the dish from turning soggy, since excess liquid would soften the bread crumbs and prevent the layers from setting.

Swap the tomato

How well each one fits the dish's main ingredients (pepper, sugar, bread, butter):

  1. Capsicumfits better
  2. Potatofits about as well
  3. Sweet potatofits about as well
  4. Tomatothe original

Fit is the average pairing score against pepper, sugar, bread, butter. Candidates are from the same food group and used in at least 100 recipes.
