Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the body of the custard, providing liquid and richness for the junket to set.
Junket tablet
Contains rennet, which curdles the warm milk into a soft, set custard.
Sugar
Caramelizes to give the syrup its sweetness and deep, toasted flavor.
Whipped cream
Adds a light, fatty topping that contrasts with the firm, mild custard.

The step that matters

Leave in a warm room until set, being careful not to jar. Rennet needs a steady, mildly warm temperature to coagulate the milk. Jarring or moving the cups while it sets can break the forming curd, leaving a grainy or weeping texture instead of a smooth set custard.
