Bacon, Boieeb
Ingredients
Directions
Wash the bacon in cold water.
Scrape and trim off any rusty or brownish spots.
If very hard or dry, soak in cold water for a few hours.
Place the bacon in a pot and cover it with cold water.
Bring the water to a slow boil and then boil steadily until done.
Replenish the water with boiling water as it evaporates.
When the bacon can be easily pierced with a fork in the thickest part, it is done.
Save the fat for frying and leave enough in the water to season greens if cooking them.
