Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the dough

  1. Prepare a puff pastry by mixing flour and butter.

  2. Give the dough six and a half turns to create layers.

Shape the crust

  1. Roll out the pastry on a floured baking sheet.

  2. Use a model to cut the pastry into the desired shape.

  3. Turn the pastry upside down onto a dampened baking sheet.

  4. Groove the edges lightly with the back of a knife.

  5. Brush the surface with egg wash and trace a ring 1.5 inches from the edge.

  6. Make four or five light incisions in the center to form lozenges.

Bake

  1. Bake in a preheated oven at 400°F (200°C) for 30 minutes or until golden.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

    Shared aroma: isobutyraldehyde (malty, green).

Flour and butter barely smell alike, yet cooks put them together in 124,287 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

All-purpose flour
Forms the gluten structure that holds the dough's layers together as it bakes.
Unsalted butter
Creates separate layers that steam apart in the oven, giving the pastry its flaky rise.

The step that matters

Giving the dough six and a half turns. Each fold of the dough, with chilling in between, creates the thin alternating layers of butter and dough. If the butter softens or the dough is overworked, the layers blend and the pastry bakes flat instead of rising high and flaky.
