Ingredients

Directions

  1. Prepare a salpicon by mixing chopped truffles, foies-gras, artichoke bottoms, and sliced olives with reduced financiere sauce. Let it cool.

  2. Decorate the bottom of a mold with a ring of truffle and fill the space with chopped pistachios.

  3. Arrange ten small round pieces of beef tongue along the lower edge of the mold.

  4. Set bands of truffle vertically from the beef tongue to the top of the mold.

  5. Garnish the bottom and sides with quenelle chicken forcemeat and place a ball of salpicon in the center.
